不同方法制备咖啡提取物及其在卷烟中的应用

Research on application in cigatatte of Coffea arabica L. extracted by different methods

摘要: 为了提高云南小粒咖啡(Coffea arabica L.)的利用率,采用热水回流提取法和微波辅助提取法制备咖啡提取物,对其进行感官评价、挥发性成分分析及在卷烟中的应用试验以及咖啡渣的表观分析。结果表明,微波辅助提取法能增加咖啡提取物的得率,比热水回流提取法增加13%,并且能够丰富咖啡提取物的香气,提高其香气质量。将咖啡提取物以0.1%(g/g)烟丝重量添加到某品牌叶组上,抽吸评价显示微波提取物能明显增加烟气甜润感,突出咖啡特征香,协调烟气,丰富烟香。因此,采用微波辅助提取法制备咖啡提取物具有高效率特点,在烟用香精香料领域中有一定应用前景。

Abstract: In order to improve the utilization efficiency of Coffea arabica L. in Yunnan, the extracts prepared by heat reflux extraction (HRE) and microwave-assisted extraction(MAE) were analyzed by sensory, volatile components, the application effect in cigarette and phenomenal characteristics of waste coffee grounds. Results showed that MAE was the more efficient extraction method for coffee extract with an improved yield of 13% compared to HRE. Besides, MAE also could enrich fragrance components of extract in order to improve its quality. The extracts of MAE had the more obvious effects than HRE extract on the aspect of improving the sense of sweet, projecting the smell of coffee, balancing the smoke and enriching the aroma of smoking when added to cigarette with 0.1% the weight of cigarette. As a result, MAE is not only a high efficiency method in the extraction of coffee but also a promising application in the field of tobacco flavors.
