Comparison of Sodium Diacetate in Wet Rice Noodles by Extraction and Distillation for Determination

Abstract: Using Direct extraction and kjeldahl distillation apparatus, a method for the simultaneous determination of sodium diacetate for wet rice noodles by high performance liquid chromatography(HPLC) was established. Methods the sodium diacetate in the wet rice noodles was converted to the corresponding acids after phosphoric acid acidification,After that,acid was collected in the Kjeldahl nitrogen distillation unit. The pH of the distillates was adjusted to around 3.0 by phosphoric acid solution(1 mol/L). Finally, HPLC was used for the determination. Recoveries of direct extraction were between 98.32%~103.13%,and the RSD was in the range of 0.322%~0.877%; Recoveries of kjeldahl nitrogen distillation were between 98.12%~102.52%,and the RSD was in the range of 0.317%~1.750%(n=10). Conclusion The method of kjeldahl distillation is simple, fast, stable and reliable, and it is suitable for the determination of sodium diacetate content in wet rice noodles.
