Extraction technology of protein from highland barley distiller's grains

Abstract: The protein of highland barley distiller's grains was extracted by alcohol-alkali dissolution and acid precipitation. Based on the single factor experiment, the alcohol-alkali ratio, solid-liquid ratio, extraction time and extraction temperature were selected as the influencing factors. Using the orthogonal experiment of four factors and three levels, and taking the protein extraction rate as the index, the optimal extraction process condition was alcohol-alkali ratio of 1∶3, solid-liquid ratio of 1∶45, extraction temperature of 30 ℃, and extraction time of 90 min. The order of the influence of the various factors on the protein extraction rate was solid-liquid ratio > alcohol-alkali ratio > extraction temperature > extraction time.
