枫槭浸膏挥发性成分分析

Analysis of volatile components in maple concrete

摘要: 采用溶剂萃取的方式对枫槭浸膏挥发性成分进行萃取,用GC-MS进行定性、定量鉴定。结果表明,枫槭浸膏中共鉴定出15种化学成分,其中主要成分为苯乙酸异丁酯(32.13%)、苯乙酸(28.53%)、甲基环戊烯醇酮(24.68%)、5-羟甲基糠醛(7.04%),甲基环戊烯醇酮为枫槭浸膏特征成分,具有类似咖啡和焦糖样的气息。甲基环戊烯醇酮、苯乙酸异丁酯、5-羟甲基糠醛、DDMP物质构成枫槭浸膏所特有的焦糖香味气息。

Abstract: The volatile components of maple concrete were extracted by solvent extraction and qualitatively and quantitatively identified by gas chromatography-mass spectrometry. The results showed that 15 chemical constituents were identified in maple concrete, the main components of which were isobutyl phenylacetate (32.13%), phenylacetic acid (28.53%), methylcyclopentenolone (24.68%),5-Hydroxymethylfurfural (7.04%), methylcyclopentenolone is a characteristic ingredient of maple concrete, with a flavor similar to coffee and caramel. Methylcyclopentenolone, isobutyl phenylacetate, 5-hydroxymethylfurfural, DDMP, and the like constitute a caramel aroma unique to maple concrete.
