Potential Hazards of Concentrated Apple Juice Production

Abstract: There are some product quality problems in the development process of Shaanxi concentrated apple (Malus pumila Mill.)juice industry,which leads to the occurrence of some quality events such as claims,returns and even destruction on the spot. The potential hazard was analysed from the process of concentrated apple juice concentrate to provide theoretical support for the healthy and sustainable development of the whole industry.
