香菇菌棒转色期生理生化特性及关键调控研究进展

摘要: 菌棒转色是香菇(Lentinula edodes)栽培关键环节,转色程度直接影响菌棒成熟度、子实体产量与品质。综述了转色期的香菇菌丝碳氮代谢、关键酶活性及菌丝形态转变等生理生化特征,明确了碳氮比、营养条件、环境因子、菌株特性及栽培措施对转色的调控效应。展望了多组学转色调控网络解析、精准智能调控、优质菌株培育等方面的研究,为香菇转色标准化技术研究与产业升级提供参考。

Abstract: The color transformation of fungal logs is a critical stage in the cultivation of Lentinula edodes, which directly affects the maturity of fungal logs, as well as the yield and quality of fruiting bodies. The physiological and biochemical characteristics of mycelial carbon and nitrogen metabolism, key enzyme activities, and mycelial morphological changes during the color transformation period were reviewed. And the impacts of the carbon-nitrogen ratio, nutritional conditions, environmental factors, strain characteristics, and cultivation practices on the color transformation were further elucidated. Additionally, the research in multi-omics color transition regulatory networks, precise intelligent regulation, and the breeding of high-quality strains was anticipated, thereby providing a reference for the research on standardized color transition techniques for Lentinula edodes and the upgrading of the industry.
