摘要: 米饭的食味品质由淀粉、蛋白质等内在组分,以及加工、烹饪等外在条件共同决定,涉及淀粉糊化、水分迁移、风味物质生成等一系列物理、化学变化。系统梳理了大米的品种特性、加工工艺、贮藏方式及烹饪条件等关键影响因素,旨在为优质食味水稻品种选育与标准化加工工艺构建提供参考。

Abstract: The eating quality of rice is jointly determined by intrinsic components such as starch and protein, as well as extrinsic conditions including processing and cooking, involving a series of physical and chemical changes such as starch gelatinization, moisture migration and the formation of flavor compounds. The key influencing factors including variety characteristics, processing technology, storage methods and cooking conditions of rice were systematically reviewed, aiming to provide references for the breeding of rice varieties with high eating quality and the establishment of standardized processing techniques.
