劣质油快速鉴别体系的建立

摘要: 试验用感官评定、水分、酸价、过氧化值、植物油中混入动物油、矿物油、大麻油、桐油、黄曲霉毒素等9种方式对来源不同的11号油样进行检测并综合分析,初步建立快速检测劣质油(地沟油)的鉴别体系,并对消费者提供用油建议。

Abstract: In this experiment,11 kinds of oil samples from different sources were tested and analyzed in 9 ways,including sensory evaluation,water content,acid value,peroxide value and plant oil mixed with animal oil,mineral oil,hemp oil,tung oil and aflatoxin.A rapid identification system for inferior oil (gutter oil) was established and suggestions were provided to consumers.
