Abstract: The effects of meteorological factors on the contents of amino acids, protein, amylose, amylopectin and fat in rice at different sowing and grain filling stages were studied by using early and late rice varieties Xiangzaoxian 45 and Rongyouhuazhan, which were promoted mainly in Jiangxi Province, as experimental materials. The results showed that different sowing dates had obvious effects on the amino acid, protein, and starch content in the early and late rice. The content of essential amino acids in early and late rice was significantly less than that of non-essential amino acids. The planting year and sowing date had a great influence on the amino acid content of early rice, and the total amino acid content of late rice was the highest at the first sowing date (sowing date on June 10). The protein content in early rice showed a trend of first decreasing and then increasing with the sowing date. The partial correlation analysis of various meteorological factors and various nutrient elements during the grain filling stage showed that higher accumulated temperature was more unfavorable for the accumulation of essential amino acids in early and late rice and the starch content of early rice, but it was beneficial to the accumulation of starch content in late rice. The partial correlation of protein content in early and late rice and various meteorological factors was not significant.
