Abstract: Kernel of Cerasus humilis protein were hydrolyzed by three kinds of enzymes including alkaline protease, trypsin and neutral proteinase. Kernel of Cerasus humilis peptide of different concentrations were gaved in the mice. Determined the antioxidant of the normal mice and model mice by analyzing the body weight, the SOD activity, the GSH-PX activity and the MDA concentration in serum, liver and kidney of mice. Results suggest that the kernel of Cerasus Humilis peptides had a relatively high level of DPPH radical scavenging activity with the IC50 value was 1.06 mg/mL. The high dose peptide could significantly increase the SOD and GSH-PX activity in serum, liver and kidney and could significantly reduce the concentration of MDA in serum, liver (P<0.05),but the effect on MDA in kidney was not significantly.
