Abstract: The effect of catechin mixed with chitosan oligosaccharide on Escherichia coli BNCC 185254 was determined. The results showed that the bacteriostatic effect was best when the mixture was 1∶4 (catechin∶chitosan oligosaccharide, W/W). Furthermore, the structural characteristics of complex compounds were analyzed from the perspective of spectral changes and crystal patterns, and the results showed that the smaller molecular size of complex compounds might play an important role in enhancing the antibacterial activity. The mixture of catechin and chitosan oligosaccharide may be a more effective natural bacteriostat.
