Research progress on selenium enriched fermentation of Lactic acid bacteria

摘要: 作为一种元素富集型益生菌,许多乳酸菌能够吸附无机硒,并将其生物转化成有机硒及单质硒,富硒乳酸菌有突出的抗氧化、抑菌、抗癌及抗突变等特性。综述了不同乳酸菌液体富硒发酵研究的现状,分析了各种乳酸菌的富硒能力,为富硒乳酸菌的选育和开发利用提供理论支撑。

Abstract: As a kind of element enriched probiotics,many lactic acid bacteria(LAB) can absorb inorganic selenium and convert it into organic selenium and elemental selenium.Selenium enriched lactic acid bacteria have outstanding antioxidant,antibacterial,anticancer and antimutagenic properties.The research status of liquid selenium enriched fermentation of different lactic acid bacteria was reviewed,and the selenium enrichment ability of various lactic acid bacteria was analyzed,which provided theoretical support for the breeding and development of selenium enriched lactic acid bacteria.
