丘陵山区板栗采后机械化加工技术集成与工艺优化

Optimization of technology integration and mechanized processing for post-harvest chestnut in hilly and mountainous regions

摘要: 为探究丘陵山区地形以及加工工艺对板栗(Castanea mollissima Blume)采后品质和经济效益的影响,以山东省泰安市主产区板栗为研究对象,对坡地自适应脱壳、热风-微波协同干燥等关键环节进行技术集成和工艺优化。通过建立脱壳装置的运动学模型和干燥工艺系统分析,获得关键装备的运行参数。结果表明,在坡度15°~35°的丘陵环境下,采用四点液压自调平底盘配合18∼25 Hz变频振动,脱壳机械损伤率由传统平原机型的13.5%降至2.3%;在干燥环节集成热风-微波协同工艺(50 ℃恒温热风+75 ℃高温脉冲微波),多酚氧化酶(PPO)活性得到有效钝化,褐变抑制率达94%,相较于传统露天晾晒更优。进一步使用高光谱智能分级技术,产品分级精度达到98.8%。综合效益评价结果表明,该技术集成体系可以使得单位加工成本降低27%,优质仁率提高33.6%,投资回收期缩短到1.4年。

Abstract: In order to explore the effects of hilly and mountainous topography and processing technology on the postharvest quality and economic benefits of chestnut (Castanea mollissima Blume), the key links such as adaptive shelling and hot air-microwave co-drying were carried out in the main production area of Tai'an City, Shandong Province. The operating parameters of key equipment were obtained by establishing the kinematic model of the shelling device and analyzing of the drying process system. The results showed that in the hilly environment with a slope of 15°-35°, with four-point hydraulic self-leveling chassis combined with 18-25 Hz frequency conversion vibration, the mechanical damage rate of shelling was reduced from 13.5% to 2.3% of the traditional plain model. In the drying process, hot air-microwave synergistic technology (with constant hot air at 50 ℃ and hightemperature pulsed microwave at 75 ℃) effectively passivated the activity of polyphenol oxidase (PPO) and achieved a browning inhibition rate of 94%, which was better than that of traditional open-air drying. Further using hyperspectral intelligent grading technology, the product grading accuracy reached 98.8%. The comprehensive benefit evaluation results showed that the integrated system could reduce the unit processing cost by 27%, increase the high-quality kernel rate by 33.6%, and shorten the payback period to 1.4 years.
