Abstract: To clarify the variation in biological activities of Prunus napaulensis following gastrointestinal digestion, explore the antioxidant and antibacterial properties of its polyphenols, and verify its practical application value in preservation, in vitro simulated gastrointestinal digestion was adopted to investigate the antioxidant activities of Prunus napaulensis. Storage experiments were carried out by coating strawberries with composite films consisting of Prunus napaulensis polyphenols, chitosan and nisin. The results showed that the antioxidant capacity of Prunus napaulensis polyphenols was relatively weak during gastric digestion, whereas all measured antioxidant indices exhibited a distinct increasing trend after intestinal digestion. For strawberry samples treated with the composite coating, weight-loss rate and decay rate were significantly reduced during storage. Meanwhile, the decrease in titratable acid content was effectively inhibited, and the contents of vitamin C and soluble solids in strawberries were well maintained. Among all treatments, the composite coating formulated with 0.05 mg/mL crude Prunus napaulensis polyphenol extract, 2% chitosan and 0.03% nisin achieved the optimal performance, which could preserve favorable quality and commercial value of strawberries. This study revealed the digestion-induced enhancement effect of antioxidant components from Prunus napaulensis, filled the research gap regarding the application of this wild resource in fruit and vegetable preservation, and provided a comprehensive theoretical basis and experimental data support for high-value resource utilization of Prunus napaulensis, as well as the development and practical application of green additive-free natural fruit-and-vegetable preservatives.
