Abstract: Pyrolysis analysis and sensory evaluation were carried out to study the effects of the extract from Polygonatum on cigarettes sensory qualities. The results showed that,13,30 and 62 kinds of constituents were identified in the pyrolysis products at 300,600 and 900 ℃; the pyrolysis product contains many aromatic substances such as fural, 2-furanmethanol, pyrazine and organic acids, 5-（hydroxymethyl）-2-furancarboxaldehyde, which can improve sensory quality of cigarettes. The sensory evaluation revealed that the extract from Polygonatum can significantly improve aromatic quality,increase the sense of sweet,reduce the stimulus and drying sense of smoke. In general, the extract from Polygonatum can reduce offensive taste, increase comfort and improve sensory quality in cigarette.
