白条鸡制品生产、贮藏、销售环节中沙门氏菌的分离与鉴定

Preliminary isolation and identification of Salmonella in the processing,storage,sales stages of chicken product

摘要: 通过对陕西省主要白条鸡生产企业加工、贮藏、运输和销售等环节中108份样品进行分析,初步探究陕西省白条鸡制品中沙门氏菌(Salmonella)的分布状况。结果表明,在肉鸡生产各环节采集的样本中未分离得到沙门氏菌;在销售环节样品中有18.75%的样本存在沙门氏菌污染,表明陕西省肉鸡制品生产环节中沙门氏菌控制措施较为完善,风险相对较小,但销售环节中存在交叉污染。

Abstract: Through the analysis of 108 samples in the processing, storage, transportation and sales of the main white striped chicken production enterprises in Shaanxi province, the distribution of Salmonella in the white striped chicken products in Shaanxi province was explored. Results showed that Salmonella was not isolated in the samples from processing, storage and transportation stages, but isolated in 18.75% samples from the sales stage. It indicated that the sales stage could be contaminated with Salmonella by cross contamination to a certain extent.
