Preliminary isolation and identification of Salmonella in the processing,storage,sales stages of chicken product

Abstract: Through the analysis of 108 samples in the processing, storage, transportation and sales of the main white striped chicken production enterprises in Shaanxi province, the distribution of Salmonella in the white striped chicken products in Shaanxi province was explored. Results showed that Salmonella was not isolated in the samples from processing, storage and transportation stages, but isolated in 18.75% samples from the sales stage. It indicated that the sales stage could be contaminated with Salmonella by cross contamination to a certain extent.
