Development of quercetin composite prebiotic solid beverage and its effect on intestinal flora of mice

Abstract: Using quercetin and fructo oligosaccharide as the main materials,the optimal formula of quercetin composite prebiotic solid beverage was determined by the single-factor test and orthogonal test.Effects of quercetin composite prebiotic solid beverage on the proliferation of Enterococcus,Enterobacter,Bifidobacterium and Lactobacillus were dynamically inspected.The experiment proved that the best formula of quercetin composite prebiotic solid beverage is 8 g fructo oligosaccharide,0.4 g quercetin,0.06 g citric acid and 0.15 g carboxymethyl cellulose.The beverage has good sensory qualities such as quercetin fragrance,moderate sourness and sweetness,and uniform color.In vitro flora proliferation tests show that fructo oligosaccharides,quercetin,and the quercetin composite prebiotic solid beverage can inhibit the proliferation of Enterococcus and Enterobacter,and can effectively promote the proliferation of Bifidobacterium and Lactobacillus.
