Abstract: Hubei province is the largest province of aquatic vegetables in China. Wuhan,the capital of Hubei province,is the largest city of aquatic vegetables in the whole country and even the whole world, and it is also the R&D center of aquatic vegetables in Asia. Aquatic vegetables,represented by lotus root,ia not only a kind of traditional,characteristic and dominant agricultural products in Hubei province and even the country,but also a kind of crops which combines social benefit,economic benefit, ecological benefit and cultural benefit. In the future, aquatic vegetables can play an important role in the revitalization of the countryside.
