Correlation analysis of essential amino acids,total amino acids and protein contents of different rice varieties

Abstract: The essential amino acids, total amino acids and protein contents of 28 refined white rice samples were determined, and the correlation between the components of different refined white rice samples was analyzed. The results showed that the correlation coefficients of protein content and total amino acid content, protein content and essential amino acid content, total amino acid content and essential amino acid content of 28 samples were 0.940, 0.950 and 0.995, respectively. There was a very significant positive correlation between these indexes. The nutritional value of protein, the main nutrient component of white rice, mainly lies in the content of amino acids. The content of essential amino acids can be used as an important index to judge the nutrition of rice
