The investigation on pollution and the safety evaluation for eating of the exported preserved eggs of Hubei province

Abstract: In order to evaluate the pollution status of heavy metals, microorganisms and residues of veterinary drugs and pesticides in the exported preserved eggs in Hubei Province, Eight exported preserved eggs processing factories in Hubei Province were sampled to detect the changes of pH value in preserved eggs during the whole process of preservation, the pH value and the contents of nutrients, heavy metals, microorganisms,veterinary drugs residues,the illegal additives and environmental pesticide pollutants were detected in the preserved eggs. The results showed that the pH value of preserved eggs remained above 12 during the 76 days of preservation, and the pH value of preserved eggs was generally more than 10.3; preserved eggs were high-protein and high-fat food, rich in zinc; 6 heavy metals such as lead and copper in preserved eggs were not exceeded the standard; 7 pathogenic microorganisms such as salmonella were not detected, and 27 veterinary drug (such as enrofloxacin) and 8 kinds of illegal additives and environmental pesticide contaminants(such as melamine) in preserved eggs were not found.According to the national and industrial standards, all the monitoring results were qualified, It shows that the exported preserved eggs of Hubei have a high quality level in food safety.
