Analysis of volatile components in maple concrete

Abstract: The volatile components of maple concrete were extracted by solvent extraction and qualitatively and quantitatively identified by gas chromatography-mass spectrometry. The results showed that 15 chemical constituents were identified in maple concrete, the main components of which were isobutyl phenylacetate (32.13%), phenylacetic acid (28.53%), methylcyclopentenolone (24.68%),5-Hydroxymethylfurfural (7.04%), methylcyclopentenolone is a characteristic ingredient of maple concrete, with a flavor similar to coffee and caramel. Methylcyclopentenolone, isobutyl phenylacetate, 5-hydroxymethylfurfural, DDMP, and the like constitute a caramel aroma unique to maple concrete.
